Awadh’s glorious history can be traced all the way back to the Indian epic Ramayana. As per the belief, ‘Awadh’ came from Lord Ram’s capital Ayodhya, presently known as ‘Faizabad’ in Uttar Pradesh.
However, it was only when the Mughals took it over in the 16th century that Awadh became better known for its cuisine and culinary skills.

Like other traditional art forms of Uttar Pradesh, the state’s cuisine was also perfected to finesse under the royal patronage of the Muslim nobility, so much so that the bawerchi khana or the kitchen was the crowning glory of Mughal palace and cooks or rakabdar were masters of spices. These culinary wizards knew just the right blend of ingredients to achieve the right flavours and their dum-pukht style of preparing food by cooking it in sealed pots on a slow flame has become synonymous with Lucknow today.
The Awadhis, proud connoisseurs of their cuisine, take immense joy in treating their guests to local delicacies, so much so, that authentic Awadhi food was an integral part of their mehman – nawazi (hospitality).
